Citizen Public House Original Chopped Salad

definitely on repeat this summer at our house!

We’re big fans of Citizen Public House and their sister restaurant, The Gladly. The first time we visited, we had their famous chopped salad. It was incredible AND they will give you the recipe if you ask - which I did! It’s a local cult favorite, and even has it’s own Facebook page! Try the recipe below and you will see why.

Easily assembled, perfect for a light dinner, this salad packs so many delicious components into the mix, and then tops them with a fresh, herby dressing. I’m including a couple of riffs that we’ve loved so you can serve this on a busy weeknight, or for special guests.

Citizen Public House Original Chopped Salad Recipe

Note: You’ll want to secure the freeze-dried corn from a natural foods store with bulk offerings or online. I ordered this one. I love the salad with traditional smoked salmon or this one, available online, or from Costco & Sam’s Club. Israeli Couscous is found in the kosher foods section or grains section of my grocery store. I’ve been known to substitute roasted cauliflower florets for the couscous if I’m trying to keep the carbs down. When time is short, or I need a non-dairy dressing, I combine Trader Joe’s Vegan Caesar and Green Goddess dressings (3 parts vegan Caesar to one-part green goddess) and serve in lieu of the dressing recipe.

Serves 6

1 cup chopped or flaked smoked salmon - see note

1 1/3 cups freeze dried corn kernels

1 1/3 cups arugula leaves

1 cup cooked Israeli couscous

Balsamic Tomatoes:

Mix together and set aside in a small bowl:

1 cup diced grape tomatoes (I cut them into fourths),

2 Tbl. good quality Balsamic vinegar

1 Tbl. olive oil

Pinch of salt and fresh-ground pepper to taste

Trail Mix:

Mix together and set aside in a bowl:

1/2 cup black currants

1/2 cup toasted pepitas

1/4 cup grated aged Asiago cheese

Dressing:

In a blender, mix together:

1 cup mayonnaise

1/4 cup buttermilk

Juice of one lemon

12 basil leaves

1 teaspoon minced fresh garlic

On a large platter, assemble the salad. Starting on the left side of the platter, create a line of flaked salmon, then freeze-dried corn, followed by the trail mix. Next make a tidy pile of arugula, Israeli couscous, and finally the balsamic tomatoes. When ready to serve, pour the dressing over the salad and toss well to combine all ingredients. This is ideally done at the table.
